The shelves at Paris-Madrid Grocery are now loaded with our most popular canned sardines, mussels, tuna, mackerel, bereberechos (cockles), octopus, and fish pâtés. In addition, we have these stellar new offerings:
Jose Gourmet smoked salmon in EVOO, in tins: This is by far, the best-tasting, richest, lightly smoked salmon I’ve ever tasted. Serve this salmon in a salad, make a rice dish with it, or enjoy with cream cheese and bagels.
Matiz brand Wild Cod in Spanish EVOO: Made with wild-caught cod from the Eastern Atlantic, certified sustainable. Tender and flaky cod with a savory flavor, it is prepared from traditional salt-cured fillets. The cod is soaked and then gently poached in Spanish olive oil.
RECIPE: Last weekend, I mixed one can of Matiz Wild Cod with 2 Tablespoons of Matiz Olivada (black olive spread) and stuffed the mixture into six piquillo peppers. I poured 1/2 cup of heavy cream over the preparation and baked at 400 degrees until the cream was bubbling. Removing from the oven I sprinkled parsley on top and served this phenomenal dish. It looked amazing as well, baked in the red cazuela that Paris-Madrid Grocery carries.
Along with the Cod and Olivada stuffed Piquillo Peppers, I stuffed additional Piquillo Peppers with slices of Raclette cheese and baked them together with the cod-stuffed peppers. The Raclette-stuffed peppers were mind-blowingly fantastic and a snap to prepare!
Espinaler Piquillo Peppers are the best brand for stuffing. Grown in Spain’s Lodosa D.O. region the peppers are roasted over wood following D.O. rules. The flavor of these Piquillo Peppers are head and shoulders above other brands that are cheaper, but from Peru. Mouettes de Arvor Sardines in butter and garlic are easy to prepare and the flavor is superb. The small sardines (6 per can) come packed in butter and garlic, ready to be quickly fried in the can’s juices and served. They make a delicious first course or appetizer – simply serve the sardines on a crostini with the pan’s remaining butter and garlic drizzled on top.

A new shipment of Kopke Tawny Colheita ports is in stock. We’ve got bottles from the scarce 1980s (1980, 1981, 1985, 1987) and the oldest bottle in stock is 1960, in 375 ml .size. Customer favorite Kopke 1985 Colheita is in stock in both 750 ($88.00) and 375 ml ($64.00) and rumor has it these may be the last bottles of 1985. In addition, our distributor has two 3-liter bottles of 1985 Kopke Colheita Tawny ($482.00) that we can special order until they sell out. The nights will be winter-cold next week so pick up a bottle of port to sip around the fireplace.
Izar-Lekua Sparkling Txakoli 2017 ($29.99) Izar-Leku Mahastiak is the joint venture between Artadi and cider producer Zapian to produce sparkling wine in the Txakoli zone of the Basque Country. With aromas of green apple typical of a Txakoli wine, it shows complex notes of rice brioche with a lovely mousse of bubbles. The dry finish shows a saline minerality, making it a fantastic pairing with finfish or shellfish. Made in the traditional method, it’s a blend of 90% Hondarribi Zuri and 10% Hondarribi Beltza, hailing from the seacoast town of Zarautz. The vines are perched right above the ocean on raised trellises, growing on clay soils streaked with slate and basalt. Aged 30 months in bottle on its lees after the secondary fermentation.
