NEW! Langres AOP soft-ripened cow milk cheese: These individual wheels are 6.3 ounces each and made with pasteurized cow milk, colored with annatto extract. This gorgeous soft-ripened cheese has also been washed with Champagne brandy to give it a creamy flavor with a long finish. Shaped with a distinctive dimple on top which is a perfect fit to hold a drizzle of Champagne just before serving. Aged in high-humidity cellars for 2 to 5 weeks.
WINES FOR LABOR DAY: The weekend weather forecast is for cooler weather, so red wines will taste great. And we’ve got a new limited edition Txakoli. Here are three tasty bottles that will pair wonderfully with a variety of holiday foods.
Gorrondona Iri BizkaikoTxakolina 2021 ($33.00) A single vineyard white wine that pushes the boundaries of the Txakoli style of wine in the Basque country. With the vineyard located .5 kilometers from the beach, the grapes show the influence of the sea, and with low ph soils, no sulfur is necessary to stabilize the wine. With flavors of green apple and citrus, Iri has a broad weight on the palate with fresh and flinty notes. This is a serious Txakoli, excellent with shellfish, cheese, or pasta dishes.
Given the naturally low yields, grapes are ripe and concentrated without losing the area’s traditional acidity. The wine undergoes spontaneous fermentation and is aged under lees in stainless steel tanks. No sulfites are added during vinification or bottling. Grapes are carefully hand-selected during a manual harvest and rushed to the winery to avoid any oxidation. There the grapes are destemmed, and only the free-run juice is used. Fermentation occurs in temperature-controlled stainless steel tanks with native yeasts. The wine then goes through a partial spontaneous malolactic fermentation and ages on the lees for five months. Give this limited wine a try!
Chateau Thivin Côte de Brouilly 2020, Beaujolais ($33.00) 100% Gamay grown in a steep vineyard with a 48-degree grade, from vines with an average age of 50 years. With more depth and structure than a typical light and fruity Beaujolais, Thivin’s Côte de Brouilly 2020 offers up complexity, spice notes, and lively acidity. Excellent with duck confit or Salad Nicoise. Certified organic viticulture.
Château La Nerthe, Les Cassagnes Rouge 2019, Côtes-du-Rhône Villages ($27.99) If lamb chops are on the menu, pair them with a bottle of this full-bodied charmer for a fantastic meal. Made from a blend of Grenache, Syrah, and Mourvedre grown in a high-elevation vineyard (1200 feet) from vines over 40 years old. Aged 9 months in concrete which gives this wine a great mouthfeel. “Warm raspberry ganache, anise, and alder notes all mix in this juicy, full-bodied version. Plum cake and singed cedar hints chime in on the finish.” 91 points Wine Spectator
